This meal has to be one of my favourite cooks that I kind of threw together in want of a nice wholesome meal as the season changes!
This meal serves four but you could stretch it to six for smaller portions with more speed.

Ingredients:
Half lbs of stewing beef
1 onion
1 good size garlic clove
2 carrots
6 chestnut mushrooms
1 courgette
4 medium sized Maris piper potatoes
1 teaspoon mixed herbs
Tablespoon of Worcester sauce
Salt and pepper to taste
Method:
Take the beef and cut it into smaller pieces about 1cm each, make sure you cut off all visible fat.
Chop an onion finely, add fry light and onions to a pan. Once the onion is soft add beef. Let the beef brown and add Worcester sauce finely chopped garlic and mixed herbs to pan.
Now add carrots and 200ml of beef stock.
Allow this to simmer for 15 minutes (if the water reduces to much just add more water.)
Now add the mushrooms and Courgette simmer for a further 10 minutes.
Now transfer the pan ingredients to a casserole dish. Chop potatoes into fine slices and layer over the top.
Be careful not to make them too thick as they will take longer to cook in the oven.
Once you have layered the potatoes spray the top with a little fry light and cover with foil. Put in oven at Gas mark 6 or 200.
Allow 1 hour oven time with foil and then check potatoes, providing they have softened remove foil and leave for a further 30 minutes.
Depending on the cut of potatoes keep checking.
Meal could be served with broccoli and peas and gravy (to be syned).
This meal is very filling and is a good old comfort meal!
Tip if you prefer a thicker sauce add a teaspoon of gravy granules remember this is syned.
