Fishcakes!

This recipe has to be one of my favourites, the whole family  enjoys them too and it makes 15 cakes, so you can freeze those spare for a later date! 

Each cake is 215 calories, but to be honest you really do not need two!

Ingredients :

1.5kg Maris Piper potatoes
440g Salmon fillet (4 fillets)
450g Smoked Haddock
550g Cod
Fresh parsley
Salt and Pepper
Dijon Mustard 1 tsp
6 slice 50/50 bread
2 x small eggs 
Plain flour

Method: 

Peel Potatoes and boil until soft enough to Mash, meanwhile place the fish in the oven on gas mark 4 all fillets of fish. Make sure you season fish with salt and pepper!

Once everything is cooked, add to a bowl potatoes and all fish, then add Parsley, mustard and a little more pepper. 

In your food processor add slices of bread and blitz until it resembles bread crumbs.

In three separate bowls add Flour, beaten eggs and breadcrumbs.

From the bowl take a portion of the cake mix in your hand and role into a ball then flatten to resemble a fishcake.

Add the cake to flour both sides, egg and then bread crumbs and place on baking tray.

Repeat until you have used all of the mixture, this should make 15 cakes.

Bake in the over for 20 minutes on Gas mark 4....

You can freeze the leftovers but remember to defrost and heat thoroughly before you eat again.
