Mexican chicken and rice one pot

Ingredients 

1 cup (actual cup) basmati rice
Onion
Peppers
Mushrooms 
Tin of kidney beans 
Table spoon of Passata
Chicken x2 breasts
Cumin
Chilli powder 
Oregano 
Paprika 
Garlic granules 
Chicken stock
30g cheddar cheese 

Method:

  1. In large pan fry off chicken and onions add one teaspoon each of all spices
  2. Then add peppers, mushrooms and kidney beans
  3. Add passata and chicken broth
  4. Add rice to mix and simmer for 15 minutes, stirring occasionally to stop rice sticking.
  5. Add some cheddar cheese to the just as it’s ready to serve.
